5-Ingredient Anti-Inflammatory Sweet Potato Brownies with Almond Butter, Cocoa and Maple Syrup

Baking is a favorite hobby for many people. However, most people often bake unhealthy sweets which is a practice that needs to stop.

Instead of unhealthy sweets, you should try making some healthy ones, like the following sweet potato brownies recipe. They are very delicious and contain easily available and cheap ingredients which are far healthier than artificial sweets.

Sweet potatoes

Sweet potatoes are naturally sweet and can regulate your blood sugar levels. If you’re trying to avoid sugar, sweet potatoes can be a perfect replacement, even with their high Glycemic Index.

They contain anthocyanins, compounds that have anti-inflammatory properties which can reduce the inflammation in your body. Sweet potatoes also contain vitamin A, B1, B2, B3, B6 and C, and are rich in essential minerals such as manganese, copper, phosphorus and potassium. They contain fiber as well, which will improve your digestion and your overall health.

Here’s how to make the sweet potato brownies:

Ingredients

  • 1 cup of mashed sweet potatoes
  • Half a cup of almond or cashew butter
  • 2 tablespoons of maple syrup
  • ¼ of a cup of cocoa powder
  • A handful of carob chips (optional)

Preparation

First, preheat the oven on 350C and grease a pan. While you’re waiting for the oven to heat up, melt the nut butter and maple syrup in another pan. Next, mix the mashed sweet potatoes, nut butter, maple syrup and cocoa powder and stir until you get a smooth texture, then add the carob chips. Pour the mixture in the greased pan and bake it for 20 minutes, before allowing the brownies to cool down. In the end, slice the cake and enjoy it!

These brownies are best enjoyed cold. You can store them in the fridge and enjoy them whenever you like.
